His wine – La Traversée – is the realisation of a long-held dream to make a wine that honestly reflects the quality of the soils of the Terrasses de Larzac, where it is made.
Four individual parcels of vines, comprising Cinsault, Carignan, Grenache and Syrah, are cultivated organically on geologically distinct terroir (slate, grés, volcanic and chalk).
“This diversity of terroir and the individuality of the grape varieties helps us to achieve harmony and elegance. Each variety is vinified separately, with no added yeasts, in concrete egg-shaped tanks, ‘tronconique’ French oak and oval foudre”.
